4 c. shredded zucchini
3 eggs
1/2 c. grated cheese, plus extra for serving
1/2 c. breadcrumbs
2 tbsp. grated onion
lemon zest
1 tbsp. minced parsley, plus extra for serving
1 tbsp. onion flakes
1 tsp. salt
1/2 tsp. pepper
1 tsp. smoked paprika
2 tsp. garlic powder
3-4 tbsp. canola oil for pan frying
Place shredded zucchini in a tea towel or cheesecloth and squeeze to remove excess liquid.
Mix everything together except lemon zest.
Form patties and chill at least one hour.
Heat oil in a frying pan. Add zucchini fritters and cook for 3-4 minutes on each side.
Drain on paper towels. Sprinkle with lemon zest, parsley and grated cheese before serving and your favorite marinara sauce on the side.
