3 medium zucchini cut in half lengthwise
1 lb. ground meat of choice
1/2 c. chopped onion
4 cloves minced garlic
1/3 c. chopped peppers
salt, pepper, cumin, chili powder, onion and garlic powder to taste
1/2 c. salsa
3/4 c. grated cheddar cheese
2 tbsp. of olive oil
Scoop out the center of zucchini and reserve for another use; place zucchini in a pot of boiling water for 1-2 minutes and drain.
Sautee onions and peppers in one tbsp. of olive oil for 3-4 min; add garlic and seasoning. Add ground meat and more seasoning, if desired and cook until meat is no longer pink.
Preheat oven to 350 F.
Spray a baking dish with cooking spray and add remaining olive oil. Add salsa to the bottom of dish. Place zucchini in dish and add the meat mixture to the zucchini; top with shredded cheese and bake about 20-25 minutes until heated through. Baking time might vary depending on your oven. This was so good and even better leftover the next day!
