Heat 2 tbsp. oil in a large pan. Add onions, salt, pepper, onion and garlic powder and cook for 5-7 minutes.
Add zucchini, remaining olive oil, minced garlic, hot sauce and seasoning.
Cook uncovered for 5 minutes.
Pour 1 c. crushed tomatoes and 1/2 c. water over the zucchini. Stir until everything is coated, then cover and cook for 20-30 minutes, stirring frequently.
Remove lid, stir in basil and grated cheese and enjoy over rice, macaroni or polenta.
