2c. corn - you can use fresh, canned or frozen
1 c. flour
1/4 c. corn meal
1 tsp. baking powder
1/4 c. milk
1 egg
1/3 c. scallions, plus 1/4 c. for garnish
salt, pepper, onion and garlic powder, to taste canola oil for frying
Heat oil in a large frying pan.
Mix together dry ingredients in a bowl.
Whisk in egg and milk; gently stir in corn then scallions.
Spoon a heaping tablespoon of mixture into the hot oil and cook for 2-3 minutes on each side.
Drain on paper towels and serve with a dollop of sour cream and scallions on top.
These are great warm or cold!
