3 c. corn (canned, frozen or fresh)
1/2 pint cherry tomatoes, sliced in half
1/2 red onion, cut into crescents
1 avocado, diced
2 tbsp. diced red pepper
2 cloves minced garlic
salt, pepper, smoked paprika, onion and garlic powder, to taste
2 tbsp. olive oil
juice of one lime
In a large bowl, whisk together, olive oil, lime juice and seasoning.
Add remaining ingredients and gently toss until everything is coated with dressing.
Chill several hours before serving.
This is a colorful side dish served with grilled meat.
