6 medium size potatoes, quartered
1/3 c. diced celery
1/4 c. diced red onion
1/4 c. shredded carrot
1 hard boiled egg, chopped
1/2 c. mayonnaise
1 heaping tbsp. mustard
1 tbsp. red wine vinegar
salt, pepper and paprika to taste
Add potatoes to a pot, cover with cold water and add salt.
Bring to a boil and cook until fork tender.
Drain potatoes and cool for 10-15 minutes.
In a larger bowl, whisk together mayonnaise, mustard, vinegar, salt and pepper.
Add in celery, onions and carrots; stir until everything is combined.
Gently stir in potatoes until they are coated with dressing.
Chill several hours.
Sprinkle with paprika and garnish with celery leaves before serving.
