4 chicken breasts with bone

salt and pepper to taste

2-3 tbsp. olive oil

6 cloves minced garlic

1/3 c. pecorino cheese

1 -2 tsp. oregano

1 c. red wine vinegar

Preheat oven 500 F.

Season chicken with salt and pepper and set aside.

Mix together olive oil, garlic, cheese and oregano.

Smear mixture over chicken, place skin side down in a baking pan and broil for 30-40 minutes.

Remove chicken from pan.

Add vinegar to pan and continue baking for a couple of minutes until it thickens.

Spoon vinegar over chicken before serving.

We like to serve it with mashed potatoes and salad.
