Chicken Noodle Casserole

1 tbsp. butter
1/2 c. chopped onion
1 can cream of mushroom soup (undiluted)
1 can cream of chicken (undiluted)
10 oz. egg noodles cooked all dente
1/2 c. French fried onions
1/3 c. milk
1/2 c. shredded cheddar cheese
2 tbsp. softened cream cheese
1 tbsp. grated pecorino or parmesan cheese
pepper, smoked paprika, onion and garlic powder, to taste
2 tbsp. chopped parsley

Preheat oven 350 F.

Melt butter in a large pot; sauté onions in butter for 3-4 minutes until they're translucent.

Whisk soups and milk into onion butter mixture; add seasoning (except paprika and parsley). Add cheeses and whisk until melted.

Stir in chicken and noodles until everything is combined.

Place mixture in a greased 9 x 13 baking dish. Top with French fries onions, parsley and smoked paprika.

Bake uncovered for 25-30 minutes.

Let sit 5 minutes before serving.
