Chicken with Peppers & Onions

1lb boneless chicken breasts, cut into pieces - season the chicken with salt, pepper, onion and garlic powder and let it marinate for several hours or overnight.
1 each red or yellow and green pepper, sliced
1/2 large vidallia onion, sliced
1 clove minced garlic cooking spray
salt, pepper, onion and garlic powder, to taste
1 - 8 oz can of tomato sauce🥫
1 tbsp. grated pecorino Romano cheese

Heat a large frying pan that has been sprayed with cooking spray; add onions and seasoning and cook for 3-4 minutes. Add peppers and continue cooking for 3-4 minutes then add garlic.

Move everything aside and spray pan with cooking spray. Add chicken and cook until it's no longer pink - be sure to turn it over so it's cooked evenly.

Add tomato sauce and one can of water gently stirring so everything is coated with sauce.

Continue cooking for several minutes - adjust seasoning if desired and add grated cheese before serving. 

I love to serve this over polenta, macaroni or rice.

It's quick and easy and low in WW points if you skip the polenta, macaroni or rice.
