1 chicken cut up or 1 lb. boneless chicken cutlets, cut into pieces 1 lb. Italian sausage, cut into bite-sized pieces 4-5 lbs. thinly sliced potatoes 5 large vinegar peppers, cleaned, seed removed and roughly chopped or you can use a 15 oz. jar of small vinegar peppers 1/2 c. juice from peppers 1 large onion thinly sliced 2-3 cloves crushed garlic salt, pepper, oregano, onion and garlic powder, to taste 2 tbsp. minced parsley 1/2 c. grated pecorino or Parmesan cheese 3-4 tbsp. olive oil
Preheat oven to 350F.
Spray a 9”x13” baking pan with cooking spray and set aside.
Heat a large frying pan with 2 tbsp. olive oil. Sauté chicken, sausage, onions and garlic with seasoning for 3-4 minutes, just until lightly browned.
Transfer to the baking dish and add remaining ingredients. Gently stir, cover and bake for 45 minutes.
Remove foil and continue baking for 15 minutes or until everything is cooked.
