Preheat oven 350 F.
6 large flour tortillas, cut into 1” pieces
salt and pepper to taste
cooking spray
8 oz. bacon
8 eggs
1 tbsp. water
1/4 c. minced red onion
2 tbsp. chopped jalapeños
8 oz. cheddar cheese
hot sauce
Line two baking sheets with foil and spray with cooking spray.
Place a rack on one of the cookie sheets.
Arrange sliced bacon on top and bake for 30 minutes, until crispy.
Arrange tortilla pieces on the other cookie sheet.
Spray with cooking spray, season with salt and pepper and bake for 10 minutes, until lightly browned.
Remove from oven and set aside.
Beat eggs with water and scramble in a large frying pan.
Spread eggs over tortillas, sprinkle with crumbled bacon, cheese, onions and jalapeños.
Bake for 5-7 minutes, until cheese is melted.
Drizzled with hot sauce before serving.
You can also add diced avocado before serving.
