2 - 16 oz. boxes of breakfast sausage

1 - 30 oz. bag of hash browns

8 eggs

2 c. milk

2 c. sliced or shredded cheese of choice

salt, pepper, smoked paprika, onion and garlic powder to taste

Preheat oven 350 F.

Spray a 9 x 13 baking pan with cooking spray and set aside.

Heat a large frying pan with cooking spray; crumble sausage into pan and cook until no longer pink.

Remove sausage and drain on paper towels.

Add hash browns to the frying pan and cook until lightly browned.

Transfer hash browns to the baking pan then top with sausage.

Sprinkle with cheese.

In a large bowl, whisk together eggs, milk and seasoning.

Pour mixture over the sausage and hash browns.

Top with additional smoked paprika and bake uncovered for 40-45 minutes.

Top with hot sauce, ketchup or avocado.

You can make this the day before and refrigerate, covered overnight.
