1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
pinch of salt
2 tbsp. sugar
3/4 c. buttermilk or mix 3/4 c milk with 1 tbsp. white vinegar
2 tbsp. melted butter
1 egg
1 c. fresh blueberries
Mix together dry ingredients and set aside. In a separate bowl mix together milk, egg and melted butter. Gradually add to dry ingredients and whisk until mixture is smooth.
Heat griddle and add a pat of butter or cooking spray. I use a soup ladle to transfer batter to the griddle; sprinkle a few blueberries on to the batter. Flip pancakes and cook until set. Serve with warm syrup and additional blueberries.
