Meatloaf
1 3/4 lbs. ground beef
1 egg
1/3 c. breadcrumbs
1/3 c. grated pecorino cheese
2 tbsp. cream or milk
1/3 c. ketchup
1 tbsp. steak sauce
1 tsp. smoked paprika
1 tsp. steak seasoning
salt, pepper, onion and garlic powder, to taste
Potatoes
2 lbs. potatoes, peeled and quartered
4 tbsp. butter
1/3 c. milk
salt and pepper, to taste
1/2 c. frozen peas
1/4 c. shredded carrots
Preheat oven 350 F.
Spray a 12 cup muffin pan with cooking spray.
In a larger bowl mix together meat, egg, breadcrumbs, cheese, cream, seasoning, ketchup and steak sauce.
Fill each cup with meat mixture and bake for 20-25 minutes, until cooked through.
Prepare potatoes while meat loaves are cooking.
Place potatoes in a pot of cold, salted water. Bring to a boil and cook until potatoes are tender, then drain.
Add butter and milk to pot and stir until butter is melted and milk is warm.
Transfer drained potatoes to the pot and mash to a smooth consistency. Add salt and pepper to taste.
Remove meat loaves from oven and set aside until cool enough to handle.
Remove loaves from pan and top with potatoes as you would spread icing on a cupcake.
Sprinkle with thawed peas and carrots.
This is a fun meal to make with the kids!
