1 1/2 lbs. ground beef 1/2 large yellow onion, diced 1/3 c. diced peppers 2 cloves minced garlic 1 tbsp. olive oil 2/3 c. seasoned breadcrumbs 1/2 c. grated pecorino cheese 1 raw egg 4 hard - boiled eggs 2 tbsp. Worcestershire sauce salt, pepper, onion and garlic powder, to taste 1/4 c. minced parlsey, plus extra for serving
Heat olive oil in a frying pan. Add onions, peppers, minced garlic and seasoning. Cook for 2-3 minutes, until soft. Transfer to a large bowl and allow mixture to cool.
Once cooled, add beef, raw egg, cheese, breadcrumbs and Worcestershire sauce.
Gently mix until everything is incorporated; roll meat into a rectangle 12” x 8 “ on a sheet of waxed paper.
Place hard boiled eggs down the middle of meat. Using the wax paper as a guide, fold the meat over the eggs and press together to form a loaf.
Chill at least one hour.
Preheat oven 375 F.
Place meatloaf in a pan that has been sprayed with cooking spray and bake uncovered for 50-60 minutes.
Remove from oven and cool for 15 minutes before slicing.
I like to serve it with roasted broccoli and noodles dressed with butter, grated cheese and parsley.
