Crockpot Beef Nachos

Beef
1 1/2 lbs. beef (you can use a London broil or roast)
1 tbsp. each cumin, chili powder, onion and garlic powder
1 tsp. each salt, pepper and ground chipotle
1 c. beef broth or water

Place everything in a crockpot and cook on low for 8 hours. Remove beef from crockpot and reserve liquid. 

Once beef has cooled, shred using a fork and transfer back to liquid. Stir beef and liquid together.

Nachos
1 bag tortilla chips
2 c. shredded cheddar or any cheese that you like
1 c. sliced black olive
1 c. diced red onion
1 c. salsa
1/2 c. guacamole or sliced avocado
1/2 c. sour cream
sliced jalapenos

Preheat oven 375 F.

Line a sheet pan with foil and spray with cooking spray.

Arrange tortilla chips in a single layer on the sheet pan.  Spoon beef and cheese evenly over chips and bake for 10-15 minutes, until beef is heated and cheese has melted.

Remove from oven and add toppings before serving
