Preheat oven 400 F.

Cut squash in half; season inside with olive oil, salt, pepper, onion & garlic powder. Place flesh side down on a cookie sheet that

has been sprayed with cooking spray and bake for 20-25 minutes.

Filling:

2 tsp. olive oil

1/2 large vidalia onion diced

1 clove minced garlic

1/2 of an apple diced

1 lb. ground turkey

1 c. fresh spinach, roughly chopped

1/2 c. broth

salt, pepper, smoked paprika, onion & garlic powder to taste 

1/2 c. shredded smoked Gouda cheese

Heat olive oil in a large frying pan; add onions and seasoning and cook for 3-4 minutes. Add garlic and continue cooking for 1 minute.

Add apple and more seasoning and cook for 3-4 minutes until apples are soft, but not mushy.

Crumble ground turkey into the pan, add more seasoning and cook until turkey is no longer pink.

Next add spinach and broth and continue cooking for 2-3 minutes.

Remove squash from oven. Once it’s cool enough to handle, remove seeds and discard. Scoop out some of the flesh and mix it with the turkey.

Scoop the turkey into the squash, top with Gouda and bake for 5-7 minutes, until the cheese is melted.

I had a little filling left over because the squash wasn’t very big.
