Whoopie Pies

Preheat oven 350 F.

Cookie

1 box Devil’s Food cake mix, dry

1/2 c. canola oil

3 eggs

1/4 c. unsweetened cocoa powder

Line two cookie sheets with parchment paper.

Spray a 1/4 c. measuring cup with cookie spray.

Fill cup with dough and place 2” apart on the cookie sheet.

Wet your hand and press each cookie with your palm to flatten. Press edge of dough to form a circle.

Bake for 12-15 minutes; cookies will be a little soft. Cool completely.

Filling

2 c. marshmallow cream

1 1/2 c. powdered sugar

1 c. shortening

1 1/2 tsp. vanilla

Beat marshmallow cream in a large bowl on high for 1-2 minutes.

Add powdered sugar and beat for another 1-2 minutes.

Cut shortening in to four pieces and add one at a time, mixing well between each addition.

Pour in vanilla and mix until everything is incorporated. Spoon a heaping tablespoon of filling onto the inner part of the cookie, then top with another cookie.

This recipe makes 8 pies.
