Split Pea Soup

1 - 16 oz. bag of split peas, rinsed and drained
2 tbsp. butter
1 large Vidalia onion, diced
2 stalks diced celery
2 diced carrots
1 clove minced garlic
8 c. chicken broth
1-2 c. boiling water
Salt, pepper, onion and garlic powder to taste

Heat butter in a large pot; sauté onions carrots, celery and seasoning until soft - about 4-5 minutes. Add garlic and sauté for 2-3 minutes; add peas and more seasoning and stir until peas are coated.

Add broth and more seasoning if desired and simmer for 60 minutes, until peas are soft.

I use an immersion blender because I like a smooth consistency.

Top with croutons before serving.
