Kale Salad

2 bunches of Kale

1 sweet potato

1 tbsp. olive oil

salt, pepper and onion powder, to taste

1/3 c. toasted walnuts

1/3 c. cranberries

4 oz. goat cheese

Wash kale, remove stems and cut into bite-sized pieces.

Clean sweet potato and cut into cubes.

Transfer to a cookie sheet, drizzle with olive oil, and seasoning to taste.

Roast @ 450 F. until soft, but not mushy.

Pour dressing into the bottom of a big mixing bowl.

Toss kale in dressing, then mix in cranberries, nuts, sweet potato and goat cheese.

Toss gently and enjoy!

Dressing

2 tbsp. apple cider vinegar

1/4 c. olive oil

2 tbsp. honey

2 tbsp. dijon mustard

1/4 c. diced onion or shallot

salt, pepper and onion powder, to taste

Whisk everything together in a bowl or put everything in a mason jar and shake until combined.
