1 lb. lean ground turkey - I like 97/3
1/2 c. chopped onion
2 cloves minced garlic
2 zucchini made into ribbons
1 c. cherry tomatoes or diced canned tomatoes
cooking spray or 2 tsp. olive oil
onion powder, garlic powder, smoked paprika, salt and pepper to taste
Spray a large frying pan with cooking spray or use olive oil. Sauté onions for 3-4 minutes; add seasoning garlic and continue cooking for 2 minutes.
Break turkey meat into frying pan, add more seasoning and cook until browned and no longer pink.
Make zucchini "ribbons" using a veggie peeler and add to the turkey; mix well, add tomatoes and more seasoning if needed and cook for 4-5 minutes until everything is heated through. Tomatoes will "pop" and form a little juice.
You can serve this as is or over pasta, rice or polenta, but it wouldn't be a one pan meal!
