1 lb. boneless chicken breasts, pounded and cut into 3”-4” pieces
1 c. mayonnaise
1 1/2 c. grated pecorino or parmesan cheese
salt, pepper, onion & garlic powder to taste
chopped scallions or parsley for garnish

Preheat oven to 375 F.

Cover a sheet pan with foil and spray with cooking spray.

Place mayonnaise in a bowl; in a separate bowl mix spices with grated cheese.

Dip chicken in mayonnaise then cheese mixture and transfer to the sheet pan.

Bake for 35-40 minutes, until chicken is cooked through.

Sprinkle with chopped scallions or parsley before serving.

A tossed salad completes this easy meal.
