1 1/2 - 2 lbs. boneless chicken breasts, pounded or thinly sliced

2 eggs dash of hot sauce

1 tsp. each of onion and garlic powder

1/4 tsp. salt

1/2 tsp. black pepper

2 tbsp. grated cheese

1 1/4 c. seasoned breadcrumbs

1 lemon

1 tbsp. minced parsley

Oil for frying ~ I like canola oil

Heat oil in a large frying pan.

Beat eggs; add hot sauce, seasoning and grated cheese.

Place breadcrumbs on a plate.

Dip chicken in the egg mixture then breadcrumbs and gently place into the hot oil.

Fry for 3-4 minutes per side, depending on thickness of chicken.

Drain on paper towels; add lemon juice and parsley before serving.
