1 lb. ground chicken
1 large Vidalia onion, diced
2 stalks diced celery
2 cloves minced garlic
1/2 c. buffalo hot sauce
2 tbsp. olive oil
1 tbsp. butter
1/2 c. chicken broth
1 can small white beans, drained
salt, pepper, smoked paprika, onion and garlic powder to taste
4 oz. crumbled bleu cheese
Heat oil in a heavy pot; add onion, celery and seasoning and cook for 3-4 minutes. Add garlic and continue cooking 2-3 minutes longer.
Add chicken and additional seasoning and cook until chicken is browned.
Add buffalo sauce, broth, butter and additional seasoning and continue cooking for 10 minutes.
Add beans and cook until beans are heat through.
Top with bleu cheese and serve with celery and / or corn chips.
