1 lb. cleaned, cooked shrimp (any size will do)
4 tbsp. butter
4 tbsp. flour
4 cloves minced garlic
1/2 c. finely chopped onion
2 c. beef broth 1 tbsp.
Creole seasoning
coarse black pepper, to taste
2 -4 slices of toasted Italian bread
Melt butter in a frying pan; add onions and sauté for 2-3 minutes.
Add garlic and cook for another minute.
Sprinkle flour and seasoning over the onions and garlic and continue cooking 2-3 minutes longer.
Pour about one cup of broth into the pan and whisk for a minute or so; add remaining broth and continue cooking for 3-4 minutes.
Season with black pepper, add shrimp and cook until shrimp is heated through.
Toast bread and arrange in an oven safe dish.
Spoon shrimp and sauce over bread and place under the broiler for a minute or two.
Serve with extra toasted bread.
