Fish

2 lbs. cod or halibut, cut into 3” pieces
2 c. complete pancake mix
salt and pepper to taste
12 oz. beer (any kind will do)
canola oil for frying
store bought tartar sauce

Chips

3 large baking potatoes, peeled and cut into wedges
salt, pepper, onion and garlic powder to taste
2-3 tbsp. olive oil

Preheat oven to 375 F.

Line a sheet pan with foil, spray with cooking spray and set aside.

In a large bowl, mix potatoes with olive oil and seasoning. Arrange potatoes in a single layer on the cookie sheet, and bake for 30-40 minutes.

In a large bowl, mix together the pancake mix, seasoning and beer.

Place fish in batter and let sit for 10 minutes.

Heat canola oil in a large frying pan.

Fry battered fish a few pieces at time. It should take 3-4 minutes per side, depending on the thickness of the fish. Drain on paper towels.

Serve with tartar sauce and potatoes in the side.
