Asparagus Frittata

1 lb. asparagus, washed and trimmed

8 eggs

1 tbsp. water

1/2 c. red onion, cut into crescents

2 tbsp. olive oil

1/4 c. shaved Parmesan

salt, pepper, onion and garlic powder, to taste

dash of hot sauce

hot pepper seeds

Preheat oven 350 F.

Line a sheet pan with foil and spray with cooking spray.

Arrange asparagus on the sheet pan, drizzle with one tablespoon of olive oil and seasoning.

Bake for 30 minutes until soft, but not mushy.

Set oven to broil.

Heat a cast iron skillet with remaining olive oil; sauté onions with seasoning for 3-4 minutes.

Beat eggs with water, seasoning and hot sauce; transfer eggs to skillet and arrange asparagus on top.

Cook for 5-7 minutes, until eggs are set.

Sprinkle with shaved Parmesan and hot pepper seeds.

Place under broiler for 3-4 minutes, until the top is slightly browned.

Cool for a few minutes before serving.

This is good hot or cold for breakfast lunch or dinner!
