Cherry Pie

Preheat oven 375°
Store bought pie crust for bottom and top
4 c. fresh cherries, pitted
1/2 c. sugar
2 tsp. cinnamon
1 tsp. almond extract
4 tbsp. corn starch
1 tbsp. butter
1 egg (for egg wash)

Arrange crust in a pie plate and set aside.

Gently mix cherries, sugar, cinnamon, almond extract and corn starch. Pour mixture into pie plate and dot with butter.

Using a pizza cutter, cut strips with remaining dough and weave them on top of the pie like a basket. You can also cut out stars and arrange them over the strips. I used colored gel to paint the stars blue before baking.

Brush dough with egg wash and sprinkle with sugar.

Bake for 50 - 60 minutes depending on your oven.

Cool at least one hour before cutting and serve with whipped cream or ice cream.
