Pumpkin French Toast with Cream Cheese Filling 4-5 c. stale bread 1 1/2 c. milk 1 c. pumpkin purée 3 eggs 1/4 c. brown sugar 2 tsp. cinnamon 1/2 tsp. nutmeg 1 tsp. vanilla Spray a 9 “ x 13” baking dish with cooking spray. Tear bread into pieces and set aside. Mix together remaining ingredients in a large bowl. Add bread and mix gently until combined. Place half of the mixture in the baking pan. Prepare filling. Cream Cheese Filling 12 oz. softened cream cheese 1 tbsp. softened butter 1/2 c. powdered sugar 1 tsp. cinnamon Mix everything together until smooth. Spoon filling over bread in the pan, then top with remaining bread. Cover and chill 2 hours or overnight. Preheat oven 350 F.Topping 1/4 c. flour 1/4 c. cubed butter 1/4 c. brown sugar 1/2 c. chopped nuts Cut butter and flour using two knives or a pastry blender. Add sugar and nuts. Crumble topping over the bread mixture and bake uncovered for 40-50 minutes. Cool for 10 minutes before serving. Drizzle with maple syrup. This is good for breakfast or dessert!
