Pumpkin Snack Cakes

1 c. granulated sugar

1 c. brown sugar

4 eggs

1 c. canola oil

15 oz. pumpkin purée

1 tsp. almond extract

2 c. flour

2 tsp. baking soda

2 tsp. pumpkin pie spice

pinch of salt

1 c. chocolate chips

Preheat oven 350 F.

Mix sugar and eggs; add oil, almond extract, pumpkin and chocolate chips.

Continue mixing until everything is combined.

In a separate bowl, mix flour, baking soda, salt and pumpkin pie spice.

Fold dry ingredients into wet ingredients and mix until everything is incorporated.

Transfer batter to a greased “9x13” pan and bake for 30-40 minutes.

Cool completely before icing.

Cream Cheese Frosting

8 oz. softened cream cheese

1/2 c. softened butter

2 c. powdered sugar

1 tsp. vanilla

Sprinkles

Mix together cream cheese, butter and vanilla.

Add powdered sugar a little at a time until everything is combined.

Frost cooled cake and decorate with festive sprinkles.
