Gingerbread

1 egg

1 c. molasses

3 tbsp. butter, room temp.

2 tsp. ground ginger

1 tsp. cinnamon

1/2 tsp. cloves

1/2 tsp. nutmeg

2/3 c. granulated sugar

1 tsp. baking soda

1 tsp. salt

1 c. boiling water

3 c. flour

Preheat oven to 350 F.

Mix flour, spices salt and baking soda and set aside.

In a separate bowl, beat egg, molasses, butter and sugar until smooth.

Add boiling water and dry ingredients and mix until everything is combined.

Transfer batter to a greased 9”x 9” pan and bake for 40-45 minutes.

Cool completely and serve with whipped cream.
