Prepare pancakes according to package directions for 10-12 pancakes.

Apple walnut Topping

1 tbsp. cinnamon

2 small apples peeled and diced

1 diced apple with skin for serving

1 tbsp. butter, plus extra for serving

1/4 c. walnuts, plus extra for serving maple syrup or caramel sauce

Heat butter in a medium size frying pan; sauté 2 peeled apples and 1/4 c. of walnuts until apples are soft, but not mushy.

Cool slightly then add to batter.

Cook pancakes on a hot griddle.

Serve with additional butter, apples, walnuts and maple syrup or caramel sauce.

Makes about 10-12 pancakes.

I like to prepare the batter the night before to save time in the morning.

You can also make a double batch and freeze them to use during the week.
