2 c. cooked spaghetti squash 2 lbs. ground chicken or turkey 1 envelope taco Seasoning 1/4 c. water 1/2 c. beans 1/2 c. shredded cheese 1/2 c. of chopped lettuce 1/2 c. of salsa 1/4 c. each of chopped green & black olives 2 tbsp. Greek yogurt
Cut spaghetti squash in half, remove seeds and sprinkle with garlic powder, onion powder, cumin, smoked paprika, pepper, salt and olive oil.
Bake at 425 F. cut side down for 40-45 minutes or until soft; cool and remove flesh using a fork.
Cook 2 lbs. of ground turkey or chicken; add taco seasoning and water and continue cooking for 3-4 minutes.
Place spaghetti squash in a glass baking dish; top with chicken or turkey, beans and shredded cheddar cheese.
Bake at 350 F. for 20-30 minutes until heated through.
