Luscious French Lemon Bars Preheat oven 325 F.Crust 3/4 c. cold butter 1/3 c. confectioner’s sugar 1 1/2 c. sifted flour 1 tbsp. lemon zest, plus extra for serving Mix butter and confectioner’s sugar; cut in flour using a pastry blender or two knives until blended. Add lemon peel; pat into the bottom and halfway up the sides of a 10” x 5” baking pan that has been sprayed with cooking spray. Bake for 20 minutes. Filling 3 eggs 1 1/2 c. granulated sugar 1 tbsp. flour 4 tbsp. fresh lemon juice Beat eggs and add remaining ingredients one at a time, mixing until well blended. Pour filling over baked crust and bake for 20 - 30 minutes. Remove from oven and cool completely. Cut into squares and dust with powdered sugar and lemon zest before serving.
