1 box brownie mix

Prepare brownies as per package directions.

Place parchment paper or foil in pan and overlap on all sides.

Pour batter into pan and bake.

Cool completely and remove from pan, using overlapping parchment paper or foil as handles.

Coconut Topping

1/2 c. evaporated milk

1/2 c. granulated sugar

2 egg yolks

4 tbsp. butter

pinch of salt

1 tsp. vanilla

1/2 c. chopped pecans, toasted and cooled

1 c. sweetened shredded coconut

In a large saucepan, whisk together evaporated milk, sugar, egg yolks and salt.

Continue cooking over low heat until mixture boils.

Remove from heat and stir in butter and vanilla.

Add pecans and coconut and mix until combined.

Spoon mixture over cooled brownies and chill for a couple of hours.

Cut into squares before serving.
