4 Granny Smith apples, peeled and cut into small pieces - about the size of the tip of your pinky
Lemon juice
3 c. complete pancake mix
1 1/2 c. apple juice or water
1 tsp. vanilla
1 tbsp. confectioners’ sugar, plus more for serving
1 tsp. cinnamon
1/4 tsp. nutmeg
Canola oil for frying
Toss apple pieces with 1-2 tbsp. lemon juice and set aside.
Mix remaining ingredients (except oil); stir in apples and let sit for 30 minutes.
Heat oil to 350°
Drop one heaping tbsp. of batter into oil and fry for about 3-4 minutes, depending on stove.
Gently turn and continue cooking until cooked through. Don’t overcrowd the pan, as you will need room to turn the fritters.
Drain on paper towels and sprinkle with powdered sugar before serving.
You can also drizzle a glaze made with 1 c. of powdered sugar and 4 tbsp. cream.
