Potato Soup

2 large Vidalia onions, diced
3 large potatoes, diced
2 cloves minced garlic
1 c. chicken broth
1 Knorr’s bouillon
4 c. water
Salt pepper onion and garlic powder smoked paprika
fresh thyme
1 scallion for garnish
French fried onions for garnish

Sauté onions 5 minutes. Add garlic and potatoes and sauté 2-3 minutes longer.

Add broth and bouillon simmer for 30 minutes.

Use an immersion blender to purée to a smooth consistency.

Serve with snipped scallions and French fried onions.
