3-4 ripened tomatoes, quartered 1 c. sliced red onion 1 c. cubed mozzarella 5-6 small cucumbers, quartered 4-6 fresh chiffonade basil leaves salt, pepper, onion and garlic powder to taste
Dressing
2 tbsp. olive oil 1 tbsp. red wine vinegar salt and pepper
Whisk together ingredients for dressing in a large bowl. Add tomatoes, onions, cucumbers and seasoning; gently mix with dressing then add mozzarella and basil. Give it one final stir and you’re ready to serve! You can add stale Italian bread when adding the mozzarella and basil if desired.
