1 avocado, sliced in half, pit removed 2 c. cooked chicken cut into bite sized pieces (rotisserie chicken works well) 1/4 c. diced red onion 1/3 c. mayonnaise 1 tbsp. Dijon mustard splash of red wine vinegar salt, pepper and onion powder to taste
Mix together mayonnaise, mustard, vinegar and seasoning.
Stir chicken into mayonnaise mixture until all of the chicken is coated with mayonnaise mixture.
Scoop onto avocado halves and sprinkle with paprika before serving.
