Grilled Peaches with Crab Meat

8 peaches cut in half, pits removed

olive oil

3 - 6 oz. cans of crab meat

1/2 c. toasted coconut

1/2 c. toasted pecans

4 c. arugula

1/2 tsp. ground ginger

salt and pepper to taste

balsamic glaze

Heat grill to medium.

Drizzle cut side of peach halves with olive oil. Grill cut side down for 6 minutes.

Mix together crab meat, ginger, salt, pepper and 2 teaspoons of olive oil.

Arrange arugula on a serving platter.

Place peaches cut side up over arugula.

Spoon a heaping tablespoon of crab meat in the center of each peach.

Sprinkle coconut and pecans over crab meat and drizzle with olive oil.

This dish is perfect for brunch, a light lunch or dinner!

It looks “fancy”, but is easy to prepare!
