Italian Anise Toast 

2 eggs

2/3 c. sugar

1 tsp. anise extract

1 c. flour

1 tsp. baking powder

1/4 tsp. baking soda

pinch of salt

Preheat oven 375 F.

Mix dry ingredients and set aside.

Beat eggs and sugar; add anise extract.

Add dry ingredients to wet ingredients a little a time, until everything is incorporated.

Transfer batter to a greased 9x5 loaf pan and bake for 20-25 minutes.

Remove from oven and cool for a few minutes.

Remove from pan and cut into 1/2” slices.

Place on a greased cookie sheet and toast for 5 minutes in each side.

Cool before serving.
