Carrot Cake Cookies 

2 c. softened butter

3/4 c. brown sugar

3/4 c. granulated sugar

2 eggs

1 tsp. vanilla

1 tbsp. cinnamon

2 c. grated carrots

1 c. chopped walnuts

3/4 c. golden raisins

Mix above in order of listed ingredients.

3 c. flour

1 tsp. baking powder

1 tsp. baking soda

Mix together dry ingredients and add to batter.

Bake 375 F for 10-12 minutes.

Cool and spread with frosting and nuts, carrots or sprinkles

Frosting

8 oz. softened cream cheese

1 stick softened butter

4 c. powdered sugar

2 tsp. vanilla

Mix and chill before frosting cookies.
