Russian Teacakes

1 c. softened butter

1/2 c. powdered sugar plus 1 1/2 c. to be used after they have been baked

1 tsp. vanilla extract

2 1/4 c. sifted flour

1/4 tsp. salt

3/4 finely chopped walnuts, toasted and cooled.

Toast nuts at 350 F. for 10 minutes or in a frying pan on the stove.

Preheat oven 400 F.

Mix butter, 1/2 c. powdered sugar and vanilla.

Add salt, flour and walnuts until everything is incorporated.

Chill dough for several hours or overnight.

Form dough into 1” balls then transfer to a cookie sheet that has been lined with parchment paper.

Bake for 10-12 minutes.

Remove from oven and let cool about 5 minutes.

Roll in powdered sugar and cool.

Once cooled roll in powdered sugar.

Store in an airtight container up to two weeks.
