Cod Stew

16 oz. frozen cod

2 cloves minced garlic

1/2 c. sliced onion

3/4 c. sliced peppers

1 c. frozen spinach

1/2 c. fresh mushrooms

1- 10 oz. can of diced tomatoes with chilies

cooking spray

Old Bay, onion powder, garlic powder, smoked paprika, hot pepper seeds, salt and pepper to taste.

Heat a large frying pan and sauté peppers and onions for 4-5 minutes, until they become soft. Be sure to add seasoning each time you add an ingredient to the pan. Add garlic, mushrooms and spinach; cook for 3-4 minutes. Move veggies aside and place frozen fish in the center of the pan. You might want to add more cooking spray before adding the fish.

Allow fish to cook for 7-8 minutes, then add diced tomatoes and continue cooking until the fish is cooked through.

Be careful when serving, as the fish will break apart easily.

You can also add chick peas or potatoes for a heartier meal.
