1 lb. ground beef
2 jalapeño peppers, seeded and chopped
1/2 c. diced onion
salt, pepper, cumin, smoked paprika, onion and garlic powder, to taste
1 tbsp. chili powder
1 - 15 oz. can diced tomatoes with juice
1 c. water
1c. shredded cheddar cheese
1 - 8 oz. box corn muffin mix made according to package directions

Preheat oven 475° F.
Spray a frying pan with cooking spray. Brown onion and peppers for 3-4 minutes.
Add beef cook until browned; drain excess fat.
Add tomatoes and water and continue cooking for 10-15 minutes.
Spray a 9” x 13” baking dish or pie plate with cooking spray.
Transfer beef to baking dish and sprinkle with cheese.
Spread the corn muffin batter over the top and bake for 15 minutes.
Serve with hot sauce or salsa if desired.
A tossed salad completes this easy meal.
