Savory Salad

2 c. cubed butternut squash
1/2 c. thinly sliced Brussels sprouts
1/2 c. chopped onion
1/2 c. chopped bacon
1/2 tbsp. olive oil
1 c. romaine lettuce, cut into bite sized pieces
1 c. arugula
1 c. baby spinach
1/2 c. sliced banana peppers
1 avocado, sliced
Juice of one lemon
Salt, pepper, onion and garlic powder, to taste

Preheat oven to 375 F.

Prepare a sheet pan with foil and cooking spray.

Place squash, Brussels sprouts, onion and bacon on the sheet pan; sprinkle with seasoning,
and drizzle with olive oil.

Gently stir to be sure everything is coated and bake for 40 minutes.

Place pan under the broiler for the last minute of cooking to crisp the top.
Serve over the mixed greens and top with banana peppers, avocado and lemon juice.
