4 Granny Smith apples, peeled and cut into small pieces - about the size of the tip of your pinky
Lemon juice
3 c. complete pancake mix
1 1/2 c. apple juice or water
1 tsp. vanilla
1 tbsp. confectioners’ sugar, plus more for serving
1 tsp. cinnamon
1/4 tsp. nutmeg
Canola oil for frying
Toss apple pieces with 1-2 tbsp. lemon juice and set aside.
Mix remaining ingredients (except oil); stir in apples and let sit for 30 minutes.
Heat oil to 350°
Drop one heaping tbsp. of batter into oil and fry for about 3-4 minutes, depending on stove.
Gently turn and continue cooking until cooked through. Don’t overcrowd the pan, as you will need room to turn the fritters.
