Calzone 

1 lb. store bought pizza dough

Filling

1 c. ricotta that’s been strained

1/4 c. pecorino cheese

1/4 c. mozzarella

1 egg

handful of chopped fresh spinach (optional)

onion powder, garlic powder and pepper, to taste

1-2 tbsp. olive oil

2 tbsp. corn meal

Place parchment paper on a sheet pan. Brush with olive oil, sprinkle with corn meal and set aside.

Divide dough in half; roll each half to form a circle.

Spoon half of ricotta mixture on one side of each circle.

Fold over and crimp edges together using a fork.

Brush with olive oil and sprinkle with everything bagel seasoning.

Bake for 15-20 minutes.

Cool before cutting.

Serve marinara sauce on the side, if desired.
